I rarely make brownies, but when I do, I like to spend lots of time on them! Espresso infused brown butter, two kinds of chocolate, fluffy whipped sugar, and cold brew make them intensely rich and extremely fudgy. Even though the entire process takes 100 hours, I think it's worth it! INGREDIENTS 2 sticks unsalted butter (225g) 1 tbsp espresso powder (6g) Coffee ice cube (30g) 4 eggs 1 tbsp vanilla paste (15g) 2 1/4 cups white sugar (450g) 1/2 cup dutch-processed cocoa powder (45g) 1 tbsp espresso powder (6g) 1 tbsp kosher salt (9g) 8 oz melted 75% cacao chocolate (225g) 1 1/2 cup all-purpose flour (215g) 3.5 oz chopped milk chocolate (100g) 3.5 oz chopped 75% cacao chocolate (100g) 6 oz chopped 75% cacao chocolate, for topping (170g) Baked in a 9x13 pan. Note from me: The 100 hours actually makes quite a huge difference in the end. Out of curiosity, I've actually baked off a batch immediately to compare to the 100-hour batch, and it's not nearly as delicious to me. It's kinda like watching a movie in 480p while your friends watch it in 4K - still good but could probably be a lot better. Thank you for watching!
still less butter than indian street food vendors😏
What did he do with the edges
I'm shitting my self, this is too much for my stomach, i'll esplode.
Man, this looks so awesome.
I almost cried when you cut the finished brownie.
Honest to God.
It's beautiful, and you should be proud of yourself.
you watch breaking bad?
Should I scale down to half if baking in an 8x8 pan?
Him eating chocolate in a white shirt and white couch frightened me.
Just watching him cook puts a smile on my face

The recipe for anybody wondering:
2 sticks unsalted butter (225g)
1 tbsp espresso powder (6g)
Coffee ice cube (30g)
1 tbsp vanilla paste (15g)
2 1/4 cups white sugar (450g)
1/2 cup dutch-processed cocoa powder (45g)
1 tbsp espresso powder (6g)
1 tbsp kosher salt (9g)
8 oz melted 75% cacao chocolate (225g)
1 1/2 cup all-purpose flour (215g)
3.5 oz chopped milk chocolate (100g)
3.5 oz chopped 75% cacao chocolate (100g)
6 oz chopped 75% cacao chocolate, for topping (170g)
Baked in a 9x13 pan.
Brown the Butter, turn the heat off and add espresso powder and stir to combine, then add frozen coffee ice cube. Set aside.
Crack 4 eggs into a bowl, add vanilla extract and sugar and beat until very light, fluffy and a very pale yellow. Sift in cocoa powder, coffee and salt. Stir to combine. Add the butter-sugar mixture and combine, then add melted chocolate and combine. Sift flour into the chocolate mixture, combining it well.
Chop the chocolate into small to medium pieces. Add 2/3 into the chocolate mixture and combine. Spread out into a pan and add the remaining chocolate. Let set in the fridge for 3 days.
Set the oven to 350F or 180C and bake for 30minutes (with a still cold batter). Wrap the still hot brownies in aluminium foil and place in the freezer for 30 minutes, then let rest in the fridge for 24hours.
I'm unfortunately gluten free but I think this is one I could get to work, might have to try it
This brownie got me a boyfriend. Than a fincé. And now, husband :)

If I don't want to taste too much coffee, how much espresso do I need instead of 6 g and the ice coffee cube?
