Note from me: The 100 hours actually makes quite a huge difference in the end. The recipe for anybody wondering:
2 sticks unsalted butter (225g)
1 tbsp espresso powder (6g)
Coffee ice cube (30g)
4 eggs
1 tbsp vanilla paste (15g)
2 1/4 cups white sugar (450g)
1/2 cup dutch-processed cocoa powder (45g)
1 tbsp espresso powder (6g)
1 tbsp kosher salt (9g)
8 oz melted 75% cacao chocolate (225g)
1 1/2 cup all-purpose flour (215g)
3.5 oz chopped milk chocolate (100g)
3.5 oz chopped 75% cacao chocolate (100g)
6 oz chopped 75% cacao chocolate, for topping (170g)
Baked in a 9x13 pan.
Steps
Brown the Butter, turn the heat off and add espresso powder and stir to combine, then add frozen coffee ice cube. Set aside.
Crack 4 eggs into a bowl, add vanilla extract and sugar and beat until very light, fluffy and a very pale yellow. Sift in cocoa powder, coffee and salt. Stir to combine. Add the butter-sugar mixture and combine, then add melted chocolate and combine. Sift flour into the chocolate mixture, combining it well.
Chop the chocolate into small to medium pieces. Add 2/3 into the chocolate mixture and combine. Spread out into a pan and add the remaining chocolate. Let set in the fridge for 3 days.
Set the oven to 350F or 180C and bake for 30minutes (with a still cold batter). Wrap the still hot brownies in aluminium foil and place in the freezer for 30 minutes, then let rest in the fridge for 24hours.
I'm unfortunately gluten free but I think this is one I could get to work, might have to try it
