Empanadas Criollas de Carne / Argentine Beef Empanada


Una receta bien típica Argentina, la empanada de carne. Cambia según la provincia donde se prepare, esta receta es la tradicional, llamada "criolla". Empanadas fritas en grasa y rellenas de carne, cebollas, morrón, aceitunas, y huevo duro; se condimentan con ají molido, pimentón, comino y sal. Son bien jugosas y deliciosas. Para preparar durante la semana de mayo y celebrar el Día de la Patria. Las empanadas no pueden faltar en las fiestas patrias, 25 de mayo o 9 de julio. Ingredientes para dos docenas: 500 gr de Carne picada de res 500 gr de Cebolla blanca común ½ Morrón rojo (120 gr) 65 gr de Grasa de Pella (vacuna) 1 Cdta de Orégano ½ Cdta de Comino ½ Cdta de Ají Molido 1 Cda de Pimentón dulce 1 Cdta de Sal 1 Cucharón de caldo de carne (1/2 taza) Para la Masa (24 discos): 500 gr de Harina Común (0000 o 000) 75 gr de Grasa de Pella 1 Cdta de Sal 240 cc de Agua Caliente Grasa o Aceite para freír: Cantidad necesaria

Here are the ingredients: EMPANADA INGREDIENTS Dough: 2 cups flour 1 stick or 1/2 cup butter or margarine (hard) 1/2 tsp. baking powder 2 tsp. sugar 1/4 cup very cold water pinch of salt Fillings: 1/2 kl ground chicken or pork 1 medium-size carrot (diced) 1 medium-size potato (diced) 2 tbsp. green peas 2 tbsp. raisins Onion Garlic 1 tbsp. oyster sauce soy sauce to taste 1 pc. chicken broth cube FOR BAKING: Brush egg wash on the top and bake for 30 to 45 minutes at 180 to 200 degree C, depending on your oven. INGREDIENTS: Set A: 1 ½ cup all-purpose flour 2 tablespoons powdered sugar 1 ½ teaspoons fine salt Set B: 4 tablespoons canola oil 4 tablespoons unsalted butter Set C: 1 egg, lightly beaten 1 teaspoon vinegar 2 tablespoons water

We chose a leather 3-seater with a chaise. *CRUST RECIPE, MAKES 12 EMPANADAS* 3 cups (360g) all-purpose flour 4 oz (113g) butter-flavored shortening (or butter, or lard) 2 teaspoons (10g) salt (plus more coarse salt for topping) 2 eggs (one for the dough, one for the egg wash) 1/3-1/2 cup (80-118 mL) white wine (or water) Combine the flour and salt and cut in the fat until you get a breadcrumb-like consistency. Mix in one egg and enough wine (or water) to make it come together into a dough. Knead for a few minutes until it's somewhat elastic. Cover and refrigerate for at least a half hour before rolling. Prepare an egg wash by beating an egg with enough water to get a paintable consistency. When the dough has rested, divide into 12 balls and roll them smooth. Roll each one out individually between two sheets of parchment or wax paper until it's like a thick tortilla. Put a little filling in the center of each one (filling recipes below), gather the excess up around the filling and crimp the seam across the top of the empanada. If you're having trouble sealing the crust to itself, bush on some egg wash and use it as glue. Put all the filled empanadas on a parchment-lined baking sheet, brush them all with egg wash and sprinkle a little coarse salt over top. Bake at 400ºF/200ºC until brown. *CHICKEN FILLING FOR 12 EMPANADAS* 2 big chicken legs (or thighs) 1 14.5 oz (411g) can crushed or diced tomatoes 1 jalapeño 1 bunch green onions 2-3 garlic cloves cheese (I used about 60g manchego) oil salt spices (I used oregano, cumin, smoked paprika and a little cinnamon) Heat a little oil in pot and get the chicken browning. Meanwhile slice the green onions, peel and chop the garlic, and dice the jalapeño. When the chicken is brown, put in the white slices of onion (reserve the greens), jalapeño and garlic and fry all that for a minute. Put in your spices and let them fry for a minute. Deglaze with the canned tomatoes. Put in a pinch of salt to start with, cover, reduce the heat and summer until the chicken is soft — about an hour. Remove the chicken to a cutting board. While it cools, turn up the heat on the pot and reduce the sauce until very thick, stirring constantly. Pull the meat off the chicken, shred it a bit (but remember it'll shred more as you stir into the sauce) and maybe chop it a bit if you don't like long strings of shredded chicken. Put the chicken in the pot along with the onion greens and some crumbled or shredded cheese. Stir, taste, add more salt if it needs it and possibly some water if it seems to dry — but I think dry fillings are better. *BEAN FILLING FOR 12 EMPANADAS* 1 15.5 oz (439g) can kidney or black beans 1 shallot 1 red chile 1/2 lb (227g) tomatillos 2-3 garlic cloves 1 lime 1 bunch fresh cilantro cheese (I used about 60g of cotija) oil salt pepper sugar Peel and chop the shallot and garlic and chop the chili. Peel the tomatillos and chop them coarsely. Cook all that in some hot oil in a wide pan, stirring frequently until you have the consistency of a jam or chutney. Drain and rinse the beans and add them to the pan. Zest in the lime and squeeze in half the juice to start with. Put in the cilantro. Grind in a bunch of pepper, crumble or shred in some cheese, and put in a pinch of sugar to balance all the acidity. Mash up a few of the beans to help bing the mixture together, stir and taste. Add more salt if it needs it.

easy flaky empanadas Dough 250gms unsalted butter / one cup 4 cups / 600gms flour 1tsp salt 1pc egg 260ml cold water / one cup add about 3/4 quantity then add a little bit until desired texture note: add sugar to your taste if you want a sweet pastry Pork filling 1 kl minced pork 1pc medium brown onion 2 cloves garlic 400gms potatoes / one cup or two medium sized 200gms mixed corn, carrot and green peas / one cup 4Tbsp tomato paste 4Tbsp soy sauce 4Tbsp oyster sauce 1 pc chicken buillon cube note: adjust seasoning to your taste 4Tbsp oil Salt and pepper to taste Raisins (optional) One cup of butter is nearly 250 gms of butter or if you read the packaging it's usually indicated on it ( some countries sell 200gms some 250 gms) or 2 sticks of butter would be the conversion. Then veggies would be around one cup also. Potatoes approximately 2 medium sized. You can also bake them at 180 degrees Celsius for about 25 minutes or until golden brown...don't forget to eggwash the empanadas before baking. Enjoy! Die maak je van ui, knoflook, gehakt, (verse) kruiden en eieren. Snipper ondertussen 1 ui en snijd 2 tenen knoflook fijn. Verhit 2 eetlepels zonnebloemolie in een koekenpan en bak de ui 3 minuten. Voeg 250 gram rundergehakt, 2 theelepels Italiaanse kruiden en knoflook toe en bak in 8 minuten bruin en rul. Schep regelmatig om. Doe het gare gehakt in een kom. Snijd 20 gram platte peterselie fijn en schep door het gehakt. Breng op smaak met peper en eventueel zout. Laat de eieren schrikken en pel ze. Snijd in stukjes en schep door het gehakt. Laat 30 minuten afkoelen. Verwarm de oven voor op 200 graden. Empanada-pakketjes maken: Laat ondertussen 10 plakjes deeg voor hartige taart in 15 minuten ontdooien. Snijd met behulp van een kommetje de hoekjes van het deeg, zodat de plakjes rond zijn. Verdeel het gehakt over één helft, bestrijk de randen met wat water en vouw het deeg dubbel. Druk de randen aan met een vork en leg ze op een met bakpapier beklede bakplaat. Klop 1 ei los en bestrijk de empanadas ermee. Bak in de oven in ongeveer 20 minuten goudbruin en gaar. ¡Empanadas de Choclo! 🥟🌽🧀😘 Ingredientes • 2 latas de Choclo Bianca • 1 Cebolla • ½ Locote o Morrón Rojo • 1 Cebollita de Verdeo • Aceite de Girasol Bianca • 300 gramos de Queso • 1 docena de Discos de Empanadas En una sartén preciosa a fuego medio con aceite va la cebolla picada, el locote en pequeños cubos y cocinar por 2 minutos. Agregar el choclo, la parte blanca de la cebollita y cocinar 5 minutos más. Apagar y dejar enfriar. Una vez frio el relleno, agregar el queso rallado, la parte verde la cebollita y mezclar bien.
