Sesame harvest!!! With a Variety of SESAME OIL Recipes 🍜 | Traditional Sri Lankan Food

➡️“Thala Aggala” is a renowned delicacy made by mixing jaggery, dates, scraped coconut and macerating with sesame seeds lastly making into a bolus. “Thala Aggala” with a hot cup of plain tea is a match made in heaven or an ale for a tedious day. 🧆☕️ ➡️The aroma that originates when the fried sesame seeds are being pounded is almost breath-taking, and definitely disperse throughout the neighbouring homes 😀. Then the pounded sesame seeds are ground for 15mins using warm water. Grinding should be till the oil is extracted from the seeds, this technique is similar to that of extracting milk from scraped coconut. Next the solution is filtered using a cotton cloth and the residue is removed, finally the supernatant is left overnight undisturbed. ➡️A flour dough was prepare 1 hour before using sesame seeds and matcha powder to make roll buns for the evening tea. A seasoning is made using sesame seeds cocoa powder, brown sugar and sprinkled atop the butter layered dough rottee uniformly. Then the dough rottee was rolled along its vertical axis and sliced with a piece of thread. Once placed on the oven after about 30 mins the odour it gives off is astounding and appetizing. 🥯🍥 ➡️The following morning starts with a glass of Kola Kenda and a piece of jaggary. As for my little brother this morning wasn’t so enthusiastic 😂. The way oil had extracted atop the supernatant leaving its residue to the bottom seemed so awe-inspiring. If the residue contaminates the oil, it become rancid, therefore sesame oil needs to be separated slowly and steadily with a hollow spoon. ➡️ Powdered white rice and purple yam flour were fried on a pan till an aroma arise. The Aluwa mould was prepared by mixing the fried mixture of flour, cardamom powder with 2 to 3 sesame seed handfuls finally adding them to the sugar syrup. Once the proper consistency appear, the mould was poured atop a plank and cut quickly into diamond shaped pieces before losing the heat. ➡️ I took a parcel made of hot Aluwa pieces to my little sister’s home. Her little ones loved tasting the warm Aluwa pieces, but they were elated to see “Sakkan” and “Moyan”. 🐕🦮 The closer you are to nature more blissful you become. For the past few weeks, our Brother has been requesting that I bake a whole fish for him. Even though it was his idea, I was sick of fulfilling his bribes from the moment I started the fish bake. He appears to require a drink in exchange for heating up the oven. So I made him promise to repair the pot rack in exchange for baking him the fish, after all, I am his elder sister, so why not? As promised, I made the drink for our Brother using Ceylon blue olives (Nil Veralu) from Nawalapitiya Aunt's garden! Blue olives are typically grown in the hills. When the tree is laden with blue olives, it is stunning to behold. Despite their blue colour, blue olives taste exactly like regular Ceylon green olives. The drink is made with blue olives and has a magical appearance. The blue skin of the olives blended with the green colour of the inside of the olives to create an unusual and pleasing colour similar to peacock blue. After marinating the fish with the spices, I garnished one side with slices of lemon, lime and mandarin, not only it gives beauty, the juices of the tangy fruits would give the fish a fantastic flavour while it baked. I layered the fish on a baking tray with potatoes and onion slices and baked it until the garnished lemon and lime slices turned golden brown. It doesn't take long for the fish to bake once the oven is properly preheated. In addition to the baked fish, I made vegetable mixed stir-fried noodles for lunch. Most people in Sri Lanka enjoy eating noodles prepared in our traditional style, despite the fact that noodles are not a traditional cuisine among our people. I made a dhal curry and a tomato salad to accompany this lunch menu. No matter how many different dishes I prepare for our Brother, his bribery will never end. His next bribe was a hot egg coffee in exchange for keeping the pots on the new pot rack(Walan massa). What a funny boy! Of course, he is my only little brother, and who better to pamper him than his adoring older sister? I'll make him a hot egg coffee later. I can still remember how our Grandmother frightened us when we were eating different kinds of fruits with their seeds saying that the seeds will grow into big trees inside our stomachs. She used to tell us the same when we were eating guava seeds as well. There was an obvious chance of us getting sick with stomach aches by eating the seeds with our ignorance as kids. It was funny when we come to think of it, as we stopped eating Guvava pips those days as we got this frightful notion of getting big trees in the stomach. Actually it is true that guava pips are difficult in digesting and they can lead to stomach problems if eaten in excess. Since as kids we never understood the truth about it, so we were been frightened with this tree growing story! Im our ancestral house garden there were so many varieties of Guava trees those days. One of our elder uncle’s uncles is growing Apple guavas in a land near our village. So our aunty had sent many messages through our brother to come and pick guavas as there are plenty in those trees. So as usual our brother dear was so impatiently waiting and asking me so many times that when I am going to pick the Guavas. That day in the morning, I got ready to go and pick some apple guavas and repeatedly calling our brother but he was not to be seen. Finally I went alone as brother was not to be found. Since they were new guava trees, they were small and was easy to pick the fruits. Unlike those days guavas, these guavas didn’t have much pips and the skin was thick as well. When they were cut, they were a bit like apples too. Since I went alone, I quickly picked the guavas and came home. Since there were 2 soursops at home, I already decided to make a different type of a dessert by using guava and the soursop. First I incorporated fresh milk together with guava juice and then the soursop juice, adding corn flour and mixed well. Then I set the dessert into two layers. Then I added chow chow pieces on to the soursop layer and added the green cherry pieces which were in the sugar syrup. Of course they had beautifully enhanced the taste of the pudding. In fact this pudding was a very soft pudding. Meanwhile our brother dear had got really upset because I went to pick the guavas alone and even refused to eat the pudding as well. I never even thought that he will get this angry for that! I got a new idea to make a guava curry for lunch. Though I have tasted the guava curry that was made by my aunt, at her place several times, I have never made it by my self. I cooked the curry exactly the way it was told to me by aunty. Since these guava was plump and fleshy as apples, the cooked curry looked so nice. On the other hand it was tasted similar to a yellow cucumber curry but tasted as breadfruit curry when it was eaten. It has to be cooked from mildly ripen guava as you cannot get the exact taste from v ripe guavas. Since I picked such lots of guavas, I made brothers favorite chilli guava salad from the balance as well. Meanwhile our cheeky little brother has taken 2 guavas and had made a drink by adding few strawberries which uncle Siriwardena brought to us from Negombo town. Such a crafty fellow our brother was as he brought me a glass of drink as well saying “I made this juice because grandmother wanted me to make it”. Of course I know his tricks as I correctly guessed why he brought a glass for me also as he was dying to eat my delicious guava pudding. He flatly refused the guava salad and the pudding when I “ pulled his leg” by telling him that both me and grandmother finished the pudding without keeping for him. I later felt a bit bad as brother got very sad n upset but how can I ever eat anything without giving it to my one and only loving little brother. That afternoon ended with a very enjoyable note as grandmother, brother and I, nicely enjoyed the Lemon milk with guava pieces and also had the pudding even before our dinner. Love you All! To a distant eye, the onion yard seems like a field of paddy in a blueish tinge. It seems as if the yard of onion whispering secrets to the ever blowing wind. Even I could be carried away. Even if I plucked onions from the small yard the loss seems so little to the yield. Feels bad if I was unable to make one of the most delicious delights, “Sinisambol Bread” to the family from the newly plucked onions. Add a bit more Maldive fish to it and the filling would taste magnanimous 🍔🧅🌶. Father loved the tea I prepared by mixing cow’s milk with cocoa powder, having it churned on fire till the tea became full of cream. He tasted every inch of it☕️. Not just just one slice of “Sinisambol Bread” but two with the tea🫣🤦🏽♀️. Some left over carrots and capsicums were sliced together to make pickle including five to six onion bulbs. A little of it were made since my family doesn’t like pickle much… 🫣😂 Prawns and cuttlefish were seasoned with turmeric and salt, left to be grilled with potatoes, onion, garlic and tomato that late evening Though I went to pick some wood in the dusk the heat of the sun was never old. On the way my sister handed me with a bag full of Madan/ Java Plum as gift from the heavens😍. As soon as I got home, made glass full of Madan squeezed a bit of lime to it since I was dying of thirst 🍇🫐🥤. An endemic cuisine to Sri Lanka now a world famous delicacy is “Kottu”. As Sri Lankans love it so much, it is very difficult to get inside a “Kottu” shop around the evening as it is full of people. At our home my little brother prepares it since he has mastered the art of making “Kottu”, the sound I make while making it is a bit of a nuisance🫣😂. To night’s dinner serves a meat curry, roasted potato, baked prawn salad 🥔🍅🍤 with a dish of “Kottu”🍽. The juice blended with soda doesn’t taste so bad...😍 The closer you are to nature more blissful you become. Despite our brother's frequent mention of replanting new chilli plants in his chilli cultivation plot, he never sighted the bare plot until it was overgrown with grass. I went to see the plot one day out of curiosity and found only one bright red Scotch bonnet (nai miris) chilli plant standing in the middle of the ground. I was curious how the tree was saved from the birds with all of the red chillies on it. I came home with all of the scotch bonnets (nai miris). Some people call these "Kavum chillies,(Kavum miris) possibly because they are shaped like a kavum (Srilankan oil cake). In addition to the picked chillies, there were some bird's eye chillies at home. I was just thinking about what I was going to do with so many chillies because they aren't like regular vegetables. These chillies are typically used in 2-3 pods per dish. I had the brilliant idea of storing half of the chillies in salted water mixed with vinegar. First, I boiled the chillies in boiling hot salted water with a cinnamon stick, a piece of the maze, and a few peppercorns, cloves and cardamom and vinegar before bottling them in the same water. When chillies are scarce, this is one of the traditional methods of preserving them. Later, I decided to make a sauce with scotch bonnet chillis (nai miris). I also made a similar tomato sauce to use at home last week. I had the idea to make a chilli sauce that could be combined with my homemade tomato sauce to make a variety of dishes. Since I made the tomato sauce, my brother has been trying every trick in the book to get me to make him some cutlets or rolls to go with the sauce. He must have realised that he wouldn't be able to get it done by me when I noticed him making the cutlets himself and eating them with a lot of sauce. I am confident that he will soon finish the sauce bottle. My brother always says that "The food is there to eat," so I didn't say anything, as in some ways, he is correct. He'd made the cutlets from minced chicken, sweet potatoes, capsicum, and cauliflower. He had added a lot of salt pickled scotch bonnet chillies to the mixture because he was having this idea to eat the cutlets with tomato sauce. later by mistake, this silly boy put a lot of scotch bonnet sauce instead of tomato sauce, on the plate. I felt sorry for him because he had eaten the spicy hot fiery cutlets with the incredibly hot chilli sauce as well. He never goes easy on any sauce, but always eats a lot of it. Colombo is a fantastic city, vibrant, and calm and relaxing all the at the same time, and an array of delicious food. Breakfast roti - We started in the morning for a classic Sri Lankan food breakfast, roti, stuffed with egg, chopped up and topped with curry sauce and dall. It was delicious, especially followed with ginger tea. Total price - 200 LKR ($1.12) Milano Hotel (Restaurant) - For lunch, Ruzaina and I went to eat at one of her favorite Sri Lankan local restaurants serving a mix of rice and curry. Highly recommended. Total price - 760 LKR ($4.24) New Paris Hotel - One of my favorite Sri Lankan foods is hoppers, and more specifically egg hoppers - a combinations of rice flour batter and coconut milk, fried in a rounded skillet and topped with an egg. Egg hoppers - 40 LKR ($0.22) each Pettah - We continued this Sri Lankan street food tour to Pettah, a busy business district of Colombo. We met up with Abram: 🤍 to do some more eating. Fruit - 100 LKR ($0.56) - First we stopped to eat some pickled and candied fruit. I especially liked the black pepper rub on some of the fruit like the pineapple. Bombay Sweetmeat Mart - One of the popular local Sri Lankan things to eat in Pettah is faluda and samosas. Pretty good, but I’m not huge on faluda. Total price - 320 LKR ($1.79) Intestines and chicken necks - 390 LKR ($2.18) - Next we stopped to eat intestines and tripe, and chicken necks. All of it was pretty tasty, my kind of snack. Brains - 660 LKR ($3.68) - Next up on this Sri Lankan street food tour, we had a huge bite of brains, all of us. Galle Face - Finally, to end this Sri Lankan food tour, we headed to the most iconic area of Colombo - Galle Face. In the evening you’ll find food vendors setting up, selling snacks and quick meals. Isso Vadai - 200 LKR ($1.12) - are fried little fritters of shrimp and crab, and it’s something you’ve got to try. I ended with special kottu roti - 600 LKR ($3.35). During the Best of Sri Lanka Food Tour with The Hungry Tourist, we were invited by Uchith and Nick to a relatives home, where they prepared a massive home cooked village cooking and eating experience. I went a little early to see some of the Sri Lankan food cooking and as they prepared all the dishes. Most of the Sri Lankan food dishes were prepared in earthenware clay pots, cooked over fire to give each dish an incredible complexity and smokiness. There were more than 19 different Sri Lankan food dishes that they prepared and that we tasted during the day. Some of the dishes were local regional southern Sri Lankan food, and each was spectacular in flavor and complexity of spice. I wanted to take a little of every single dish, and my plate piled up so high, I didn’t ever realize it. It was an absolutely Sri Lankan food feast! Today I ate Sri Lankan for 24 hours and yes I enjoyed every bit of it. Sri Lanka, formerly known as Ceylon, is an island country in South Asia. Sri Lankan food is one of the most underrated cuisines world wide. Most of their food consists of rice and curry. Well known for its spice, it’s fragrant and deliciousness. I started of my morning with lentils, bread and sambal, with a side of medu vada. Topped with a delicious tea. For lunch, I had kottu with fish roll and mutton rolls. As the Kottu was too spicy I had to cut my “lunch” in half. And complete the rest at a well known takeaway place called Sambal Express, where I purchase a delicious mutton curry with a cold tropical drink. For dinner I had a variety of meals which included: lamprais, chicken biryani and rose lassi. Ending the night with Wattapad, Hoppers and a cup of tea. Yes, I did try sweet paan and yes it was absolutely …. The next day I went to Hoppers in London which was 10/10!!! I brought egg hoppers, chicken curry, masala paneer and masala dosa, with a side of daal and paratha, this was my favourite because it was authentic and delicious. I hope you enjoyed this video. Watermelon 🍈 is a fruit of popular thought known as a heavenly delight! Usually, the edible part is the sweet juicy pulp🍉 encapsulated in a thick pericarp... Even the pericarp can be used in the cuisines. Melon fruit can be of several varieties according to the colour of the pericarp and the pulp inside. The yellow pulp variety is a bit rare to find. ➡️ We usually don’t throw away the pericarp after eating the pulp and use it to prepare several curries. Fruti fruit and Melon Candy are made after drying the pericarp... 🫣 ➡️ Melon cordial can either be used as a drink or a natural colouring agent. “Vandu Cake” made in the steam with jack leaves is an age-old recipe. It was my idea to put “Penipol”🥱🍯 inside of it😍 ➡️ Milky fish curry and “Polsambol” are two ideal side dishes for String Hoppers. A mouth-watering taste was added by Melon pericarp curry... 🤤 ➡️ It was so mingy to cut the roll cake mixed with melon cordial as it was so unique and picturesque. If you are looking for a spicy and flavourful chicken curry, Sri Lankan chicken curry is our favorite. It tastes incredible with the bread of your choice or some people prefer to have it with some hot steamy rice. This curry is prepared from coconut oil, a lot of spices, chicken, and coconut milk. For making this curry, we have used curry-cut chicken pieces and marinated them for a while. The whole spices are first roasted in this recipe till fragrant and then ground to a fine powder. Here the ground powder gives the most prominent spicy and rich flavors. We will roast the chicken in this ground powder and then later to make it creamier and to give it a sweeter texture we will be adding coconut milk. We cannot really explain the goodness of this curry. It moreover takes like Chettinad style chicken curry from Tamil Nadu. The only difference we see is that it's a little creamy and rich. ➡️ Every corner of our village is scented with the sweetness of bael fruit fallen off the trees. I loved that refreshing smell from my childhood. Ripe fruit is an age-old food article, and raw fruit is an essential ingredient of our traditional medicine. 🍃🍈 ➡️ Ripe baell fruit has its characteristic odour and is highly recognized for its medicinal properties. A mouth-watering delicacy among most villagers, eat beal fruit with a pinch of sugar or jaggery. 😍 ➡️ To rid the fruits of their acridity, they were peeled and kept over a night by cutting them into several inch-long pieces. The following day, bael pieces were collected, boiled over for 15 minutes, and strained. To have the sugar syrup soaked into the bael pieces, they were left to boil after mixing with brown sugar under mild heat. Even a drop of hot water with this golden yellow bael piece is a heavenly taste. 🥨🧇🍯🥛 ➡️ My uncle from Kiriella, who was abroad, visited us yesterday. As his usual delicacy, we had plenty of toffees🍬🍭 and sweets🥖. It was a full-blown rampage to hide my parcel full of plums, dates, berries 🫐🍒🍇, and nuts 🌰🥜 from the rest of my family. 🤭🫣🤤 ➡️ I baked a fruit cake🥧 by adding those bael pieces and some berries he sent. It was mouth-refreshing and crispy when the berries crushed in between the teeth. The coating made of sugar-bael syrup was an eye tempter. Mother and father tasted every bit of it with ginger tea. It seemed Saki didn’t get enough of the cake. 🤫🤷🏽♀️🍊🍰🎂 The closer you are to nature more blissful you become. Pol sambol (coconut sambol) is a traditional Sri Lankan condiment prepared with freshly grated coconut. It is most often used as an accompaniment with rice, string hoppers (idiyappam), hoppers (appam), as well as other dishes.

Some of the best crabs in Sri Lanka come from Trincomalee. Much of the culture and people of Trincomalee are Tamil, and the food and culture reflects that. King of Crabs - First we went to visit the main crab dealer of Trincomalee where he pulled out some fresh crabs from the lagoon. We ended up buying 3 KG of crab - 5,500 LKR ($30.68) to bring back to the house to cook. At the house, the family had already prepared a selection of Sri Lankan Tamil food dishes, that were vibrant and ready to be eaten, but they immediately got started cooking the crab. The crab cooking was simple, but heavily relied on their own family blend of masala spice mixture. All the dishes were served over a banana leaf plate, each with its own color and vibrancy. It was an incredible meal, so much delicious food and such a variety. I loved it. It was a perfect was to spend a day learning about Sri Lankan Tamil food in Trincomalee, Sri Lanka. Sri Lankan cuisine is known for its particular combinations of herbs, spices, fish, vegetables, rices, and fruits. Influences from Indian (particularly South Indian), Indonesian and Dutch cuisines are most evident with Sri Lankan cuisine sharing close ties to other neighbouring South and Southeast Asian cuisines.
