Print the Recipe: 🤍 Ingredients 10 apples, peered, cored, and sliced 4 oz (114 g) unsalted butter 3/4 cup granulated sugar 1 cup packed light brown sugar 4 and 1/2 tablespoons (50g) cornstarch 1 tablespoon ground cinnamon 1/4 teaspoon salt 1/2 cup heavy whipping cream Instructions Melt the butter in a large skillet over medium heat. Add all of the remaining filling ingredients except for the cream. Cook the filling until it thickens. The apples should be fork tender. Remove from the heat and add the heavy cream. Mix and set aside to cool completely. The filling can be stored in the refrigerator in an airtight container for up to 2 weeks. Notes If the apples release too much liquid, the filling may take longer to thicken. To prevent the apples from getting mushy, combine a tablespoon of cornstarch with 2 tablespoons of warm water together in a bowl. Whisk tigether and add to the filling. This will help thicken the juices faster. If the filling gets too thick (too much cornstarch), thin it out with some more heavy cream and a splash of water or apple juice. Apple Pie Filling You can use to swirl into cakes, as cake topping, apple crisp, as an ice cream topping and of course for pies! You will need to double the recipe for a deep dish pie 3 1/2 cups sliced or chopped apples tossed with about 1 1/2 Tablespoons lemon juice (This time I needed my apples chopped for the recipe I will use them in) Any baking apple is fine. I like to mix mine. I used Honeycrisps and Jonagold this time. 1/2 cup water 3 Tablespoons sugar 3 Tablespoons brown sugar (light or dark) If you do not have brown sugar regular sugar is fine. 1-1 1/2 teaspoons ground cinnamon dash of salt 2 Tablespoons butter Slurry: 2 Tablespoons water, 2 Tablespoons cornstarch Directions: Slice or chop apples as you will need to use them (slices for pies, chopped for toppings, etc.) Toss with lemon juice. Set aside. Melt butter in pan. Whisk together the 2 Tablespoons each of water and cornstarch. Set aside. Add to the butter, both sugars and water. Whisk well. Add cinnamon and dash of salt. Whisk well. Add the cornstarch slurry. Whisk well. Bring up to a boil. Add apples, stirring thoroughly. Bring apples back up to a boil. Continue to to keep apples moving and let them stay boiling for 30-40 secs. Turn temperature down to a simmer. Cover with lid or foil and continue as shown to let apples simmer 6-8 minutes approximately, until done to your likeness. If using for baking about 6 minutes. If using for a topping then go up to about 8 minutes. Remember to give them a good stir as to cook them evenly. Use as you would and type of pie filling. Makes about 2 1/2- 2 3/4 cups filling.Depending on the pie size you may need to double the recipe. The filling will keep in the refrigerator for about 3 days. If not using right away, just place cooled filling in a freezer bag. Hint: after filling the freezer bag remove as much air as possible and lay on a flat surface in the freezer. It is much easier to store it flat in your freezer. Freezes well for up to 9-10 months. To make a pie using the filling: Preheat your oven to 425 degrees. Place a bottom crust. Pour cooled pie filling (room temperature is fine) into the pie. place a top crust (cut a few vent holes) or a lattice style crust on top. Crimp the edges of the pie dough. Brush the top crust with egg white. Bake for 38-45 minutes or until golden brown. You may want to use a pie shield or foil on the edges to avoid over browning as the pie bakes. We’ve been working on this recipe for about 6 months and it was worth the wait. The marinade penetrates the ribs with crisp apple flavor and the apple pie glaze will melt your face off with flavor. These are easily some of the best ribs we’ve made and have changed the way we look at smoking pork. Get ready for a flavor experience. Recipe: Apple Marinade 1/2 green apple, cored and cut into chunks 3/4 cup apple juice or cider 1/4 cup apple cider vinegar 2 teaspoons Worcestershire sauce 1 tablespoon HLM BBQ Razzle Dazzle 1 rack baby back ribs 1/4 cup HLM BBQ Back Rub Glaze: 1 3/4 cup Apple juice 1/2 apple finely minced 2 tablespoons dark brown sugar 1 tablespoon back rub Olive oil Corn starch slurry - 1 tablespoon cornstarch mixed with 1 tablespoon cold water. OR Apple Pie Filling Mop/Spray: 1/4 cup apple juice 1/4 cup apple cider vinegar 1/4 cup soy sauce 3/4 cup water Instructions: 1. The night before combine all marinade ingredients in a blender and blend until smooth. 2. Score the membrane on the back of the ribs and poke holes in the meat between the bones using a fork. 3. Place ribs in a bag or shallow baking dish and cover in the marinade. Massage the marinade into the ribs, cover, and place in the fridge overnight. 4. 45 minutes before smoking, remove the ribs and discard the marinade leaving the remaining apple paste on the ribs. Rub it in like you would a binder then season with HLM BBQ Back Rub all-purpose seasoning and let sit. 5. Prep smoker to 250F. Place ribs on the smoker and smoke for 4-5 hours, spraying every 45 minutes. 6. Prep glaze. Add olive oil to a saucepan over medium-high heat, add minced apple and sauté until they start to brown. About 5 min. 7. Add apple juice, brown sugar, and Back Rub then mix until dissolved. 8. Bring to a boil then reduce to a low simmer. Reduce by half until it’s thick and sticky - about 20 minutes stirring often. Then pitch in the corn starch slurry and continue to cook for 3 minutes. 9. During the last 30 minutes of cooking the ribs. Glaze every 10 min. 10. Let the ribs rest for 10 minutes, cut and serve. FULL RECIPE: 🤍 Here is what you'll need! Apple Pie From Scratch INGREDIENTS Pie Dough 2½ cups flour 1 teaspoon salt 1½ sticks butter, cold and cut in cubes 4-8 tablespoons ice water Filling 2½ pounds Granny Smith apples, cored and sliced ¾ cup sugar 2 tablespoons flour ½ teaspoon salt 1 teaspoon cinnamon ¼ teaspoon nutmeg ½ lemon 1 egg, beaten 1 tablespoon sugar Vanilla ice cream PREPARATION Preheat the oven to 375°F/200°C. In a medium-sized bowl, add the flour and salt. Mix with fork until combined. Add in cubed butter and break up into flour with a fork. Mixture will still have lumps about the size of small peas. Gradually add in ice water and continue to mix until the dough starts to come together. You may not need all of the water, but if the dough is too dry then add more. The dough should not be very tacky or sticky. Work the dough together with your hands and turn out onto a surface. Work into a ball and cover with cling wrap. Refrigerate. In a bowl, add the sliced apples, sugar, flour, salt, cinnamon, nutmeg, and lemon. Mix until combined and all apples are coated. Refrigerate. On a floured surface, cut the pie dough in half and roll out both halves until round and about ⅛-inch thick. Roll the dough around the rolling pin and unroll onto a pie dish making sure the dough reaches all edges. Trim extra if necessary. Pour in apple filling mixture and pat down. Roll the other half of the dough on top. Trim the extra dough from the edges and pinch the edges to create a crimp. Make sure edges are sealed together. Brush the pie with the beaten egg and sprinkle with the sigar. Cut four slits in the top of the pie to create a vent. Bake pie for 50-60 minutes or until the crust is golden brown and no greyish or undercooked pastry remains. Allow to cool completely before slicing. Top with ice cream and enjoy! Canning apple pie filling is not much work, it looks beautiful in the jarsespecially Weck jarsand it is such a convenience. Check out Clear Jel on Amazon: Hoosier Hill Farm Clear Jel Thickener (cook type) NON-GMO large bulk 3 lb. bag, batch tested to be gluten free RoseRed Homestead Apple Pie Filling 6 quarts sliced apples (tart apples are best) 5-1/2 cups sugar 1-1/2 Clear Jel (the cook typenot the no-cook typelink is above) Spice mixyour choiceabout 1-2 Tbs (a bit of cardamom is fabulous) 7-1/2 cups water or apple juice or a combination of both 3/4 cups bottled lemon juice Peel, core and slice apples and place in lemon water (or similar) to prevent browning Blanch apple slices, 2 quarts at a time, in boiling water for 1 minute Mix dry ingredients together and place in a large pot Add apple juice/water Cook over medium hear stirring constantly until mixture boils and thickens Add lemon juice, bring back to a boil and boil for 1 minute Stir in apple slices and fill jars. Place lids as usual. Process in a water bath canner for 30 minutes if elevation is 0-1000 feet ; 35 minutes between 1000-3000 feet; 40 minutes for 3000-6000 feet and 45 minutes above 6000 feet*. Allow jars to remain in canner for at least 10 minutes after processing time is completed to help prevent the filling from oozing out of the jars. Watch more How to Make Awesome Cakes & Pies videos: 🤍 INGREDIENTS: For the double crust: 2 Ã‚_ c. flour 1 1/2 tbsp sugar 1 tsp salt 20 tbsp or 2 1/2 sticks unsalted butter (cold) 4-5 tbsp ice water. For the apple filling: 5-6 medium apples (I like to use 2 to 3 different varieties of tart apples) 3/4 c. sugar Ã‚_ tsp lemon zest 1 tbsp lemon juice 1/4 tsp salt 1/4 tsp ground cinnamon 1/4 tsp ground nutmeg For finishing: 1 egg white 1 tbsp sugar for dusting First, we're going to start by peeling and coring the apples and then slicing them into small chunks. I'm going to use a paring knife to do this. You can use a vegetable peeler if you want. That works pretty well. A lot of people like that. They even make these awesome machines that will peel and core an apple yourself. I don't tend to use them because we do a lot of it and it takes a little bit more of the skin off than I like, but whatever it takes to make you make an apple pie, you should do it. I take off all the peel. You know, if you leave a little tiny chunk of peel on there, no one's going to complain and maybe they'll even think, wow, that's really an apple pie if there's a tiny piece of peel. So don't sweat it too much. Now I'm going to slice the apple in half and I'm going to use a melon baller to take out the center. It's just a little trick. It helps make this process go fast. If you don't have a melon baller, don't go out and get one, but it's a kind of a nice little thing to make it go quickly. OK. So now I've taken all the peel and the core out, got a little apple. I'm just going to cut it into some chunks. Right now I'm using a blend of apples. I've got Golden Delicious, I've got Granny Smith and I've got an Empire apple. Really depends on what you can get and what time of year it is, but I like to use a variety of apples in my pies. Three or four types is ideal. You're going to get different textures, some will be sweet, some will be tart. They'll bake up differently, so when you bite into the finished product, the pie, there will be some pieces that are more like a chunky apple and some will almost dissolve and just give up a lot of sweetness, a lot of sugar into the pie. So I've got my apples. Now I'm going to add a little bit of sugar. I'm going to add a little bit of salt and this is some cinnamon and a touch of nutmeg makes a nice addition. I'm going to throw a little bit of lemon zest in there. Not a ton, but a little bit. You don't want the chunks to be too big. I'm also going to give a squeeze of lemon juice in there. I like to juice my lemon into a separate bowl, just so I can keep some of those seeds out of the pie. There's one in there. All right. And that's just a little bit. Now you're adding the sugar and the lemon juice. Those are going to combine and they'll start breaking down the apple. It will make the apple pie thick. The filling will thicken up because of the pectin and that the lemon juice and the lemon zest and the sugar all help break down the apple and release that pectin. And so we'll combine all this, we'll mix it up with the rubber spatula and then I'm going to let it sit for a few minutes, probably five, ten minutes. Not too much longer than that, but you'll see that there's a lot of liquid at the bottom of the bowl and that's delicious. You should use that. Definitely put it in the pie. So let's let that rest for ten minutes and we'll start rolling out the pie crusts and getting ready to assemble the pie.

A classic style apple pie that's hard to beat made with a buttery crusty flaky crust. This recipe uses two types of apples, the green granny smith apples for their tartness and softness plus the yellow jonathans which are sweeter and juicier. A few subtle spices are used including star anise, clove and cinnamon. I find that too many recipes are overpowered with spice. This is a perfect balance to enhance the apple flavour and not over power it. By creating the lattice work, the steam evaporates giving you a firmer filling and crustier crust that's not soggy. Cut each apple quarter in thirds crosswise and combine in a bowl with the zests, juices, 1/2 cup sugar, flour, salt, cinnamon, nutmeg, and allspice. Roll out half the pie dough and drape it over a 9- or 10-inch pie pan to extend about 1/2-inch over the rim. Don't stretch the dough; if it's too small, just put it back on the board and re-roll it. Fill the pie with the apple mixture. Brush the edge of the bottom pie crust with the egg wash so the top crust will adhere. Top with the second crust and trim the edges to about 1-inch over the rim. Tuck the edge of the top crust under the edge of the bottom crust and crimp the 2 together with your fingers or a fork. Brush the entire top crust with the egg wash, sprinkle with 1 teaspoon sugar, and cut 4 or 5 slits. Place the pie on a sheet pan and bake for 1 to 1 1/4 hours, or until the crust is browned and the juices begin to bubble out. Serve warm. Perfect Pie Crust: Yield: Two 10-inch crusts Dice the butter and return it to the refrigerator while you prepare the flour mixture. Place the flour, salt, and sugar in the bowl of a food processor fitted with a steel blade and pulse a few times to mix. Add the butter and shortening. Pulse 8 to 12 times, until the butter is the size of peas. With the machine running, pour the ice water down the feed tube and pulse the machine until the dough begins to form a ball. Dump out on a floured board and roll into a ball. Wrap in plastic wrap and refrigerate for 30 minutes. Cut the dough in half. Roll each piece on a well-floured board into a circle, rolling from the center to the edge, turning and flouring the dough to make sure it doesn't stick to the board. Fold the dough in half, place in a pie pan, and unfold to fit the pan. Repeat with the top crust.
